Isabella Marie


Meet Bella. My precious, energetic, beautiful niece. Bella was born on Oct. 2, 2009. Our whole family had one heck of a year that year. My sister found out she was expecting. I got married. My dad had open heart surgery. Bella was born 2 days after my dad had come out of surgery and into the ICU to recover. Only 4 days after my Birthday. In the midst of fear and uncertainty with what was happening with my dad, this awesome little girl came into the world. She was a first for a lot of us. My sister's first child. My mom's first grandchild. My first niece. We loved her so much.

Zucchini Goodness

I promised two recipes from the last couple of nights so here is the other :) This one makes me happy because I love Squash. Any kind. When I get around to making it, I promise to share my favorite squash soup recipe with you. Here's what we had last night:

So, I may have gotten a wee bit lazy with my recipes which is why I haven't posted! But, I will share two with you now in a couple posts. Aren't I the best? :) All of my recent recipes I found somewhere on Pinterest. Can I get a woop woop for that amazing, addicting site? I am super excited to share these last couple of delicious, healthy recipes with you. I must confess, however, that plans changed a bit and we ended up having left overs on Saturday night after a long but awesome day with out super close friends at the waterpark. So here's what we had Saturday Night:

Roast with Garlic Mashed Cauliflower

As Promised, here is what we had for dinner last night :)

So here is the deal. My husband was diagnosed with type 2 diabetes 2 years ago. So we have basically been eating a carb free diet for some time now. However, 6 months ago, an amazing doctor that took the time to get to know him did some testing and actually concluded that he was in fact type 1. She basically took one look at him and said, there is no way you have type 2 Diabetes. Mind you, my husband was as skinny as a stick and she could tell his body just wasn't producing any insulin. When we first got the news we were bummed. When we got the news the second time, we were even more bummed because this meant insulin shots and no one likes to take shots, let alone 3+ times a day. With that said, we still try to maintain a pretty carb free diet. Insulin is a tricky little booger and taking a ton of it just to eat pizza and sweets all the time just isn't his idea of staying healthy. Thus the reason why most of the meals I make are fairly healthy and mostly free of carbs. So you got the run down of why we eat what we eat and now I shall give you the recipe! I have tried a ton of roast recipes and this one is by far the best! It is so full of flavor! Since we haven't had potatoes in years, the mashed cauliflower truly is the next best thing. I love them! ENJOY!

Grocery shopping creatively?

I really like LOVE to grocery shop.I realize how strange that sounds but I just do and here's why; I love to budget, pick out new meals, create menus, and spend money.I love all of these things because I love to be creative and organized. Searching the Internet for a new wow meal,running home to add my latest receipt to the budget, and color coordinating my calendar are the little things I find fun. While I don't always have the money for a new pair of shoes, or that cute shirt I just saw on Pinterest, I do always have a budget for food. Hey, when you're a "shopaholic" you gotta make do with what you have and it's not like we can't eat, right? :) I am definitely not the girl with all the coupons, running from store to store to get awesome prices, but I do keep our budget at a mere $250 each month with a $100 eating out allowance so I feel like I am doing OK with it. I sometimes make up my own recipes and other times I find really great ones that other ladies just like me come up. Either way, I would love to share my menu plan with you all this week. Please feel free to share any favorite recipes or cool things you like to do to stay organized!

Friday- Red Robin with friends
Saturday-Taco Lettuce Wraps
Sunday-Crock Pot Chicken Enchilada Soup
Monday-Zucchini, Black Bean, & Rice Skillet
Tuesday-Grilled Talapia and Veggies 
Wednesday-I am babysitting some favorite kiddos of mine so honey is on his own!
Thursday-Key West Grilled Chicken with Lime
Friday-Frozen Pizza
