I promised two recipes from the last couple of nights so here is the other :) This one makes me happy because I love Squash. Any kind. When I get around to making it, I promise to share my favorite squash soup recipe with you. Here's what we had last night:
Zucchini, Black Bean and Rice Skillet: Healthy and delicious.
What's in it:
1 tablespoon Vegetable oil
1-1/2 cups sliced zucchini
1/2 cup diced green bell pepper
1 can (15 oz each) Black Beans, drained, rinsed
1 can (14.5 oz each) Fire Roasted Diced Tomatoes with Garlic, undrained
1 cup instant white rice
1/2 cup shredded Cheddar and Monterey Jack
Here's how I made it:
-Heat oil in large skillet over medium heat. Add zucchini and bell pepper; cook 5 minutes, stirring occasionally.
-Add beans, undrained tomatoes and water. Increase heat and bring to a boil-Add rice; stir well. Cover; remove from heat and let stand 7 minutes or until liquid is absorbed. Sprinkle with cheese
-I only made a couple of changes. I sliced the Zuchinni small because I prefer it that way. I also didn't use the cheese, and I added soy sauce for some flavor, it was a a little bland before anything was added. When I make it again, I think I will add some minced garlic, salt and pepper. Enjoy :)
