If you want to win a pie contest...

I may be a little competitive. And by a little, I mean I am very competitive. Sometimes it's ok, and other times I annoy myself. I have been raving about the pie contest we were having at our ladies night out for weeks now. I was so excited. I found the most amazing pie recipe and I couldn't wait for everyone to try it. My husband, while doing announcements one week, says "I know you're all excited about this ladies night out coming up soon and my wife wanted me to tell you all she's going to win." I was mortified. But I believed it. Bad Jess.

So Friday afternoon, I went to the store and grabbed all my ingredients. Luckily I have made this pie before so I knew what to expect and how to make it more "presentable." (which is why you'll see that I chose to make my own crust this time)

There were a lot of great pies there and we all had so much fun trying them and hanging out with each other. When it came time to announce the winner, I was mid conversation, but you better believe I heard it. :)

Because I won

Honestly, this was a delicious pie. My personal all time favorite! But of course, I can't take full credit for it, I mean I did find this recipe online!

We got to choose a prize and one was a GC to Starbucks, which I claimed. And if I am being honest, all that was happening here was me doing something I loved, to get something I loved, which is coffee, and chai, and those cute little holiday cups filled with white chocolate mochas.

Which was good because this particular pie cost me $15 just to make! But it was all worth it and the night was terribly fun!

So if you want to win a pie contest...

Chocolate Covered Strawberry Pie

What's in em'
1 quart fresh strawberries, sliced
1 (8oz) package of cream cheese, room temperature
1 cup confectioners sugar
2 cups white chocolate chips
1 cup milk chocolate chips
1 cup heavy cream
1 teaspoon vanilla extract
1 Oreo crust
(for the crust put 24 oreos in a food processor and blend until it's small and coarse. add 1/4 cup melted butter and mix with a spoon. Smooth into a 9in pie pan and let cool 1 hour in fridge) -or just buy one from the store, I guess.

Here's what ya do

Melt 1 cup of the white chocolate chips in the microwave per instructions on the bag. Be careful not to burn them!

Beat the heavy cream, vanilla extract, & 1/2 cup of the confectioners sugar with an electric mixer in a bowl until it becomes thick.

In a separate bowl, beat together the softened cream cheese, the other 1/2 cup of confectioners sugar, & the cup of melted white chocolate.Gently fold the whipped cream into the cream cheese mixture.

Spread 3/4 of the cream into the chocolate pie crust. Doing it all at first will cause an overflow so just start out with 1/2 to 3/4 of the mixture.

Press all the strawberries into the cream, stuff em in there, you want every last one in this pie. Spread the remaining cream on top with a rubber spatula.

Melt the remaining white chocolate in one bowl & melt the milk chocolate in another. Drizzle the melted milk chocolate on firs then the white chocolate. Try not to throw it all on there at once because it makes it super difficult to cut through, although still delicious.

Here's my cool iPhone pics because my dream of owning a professional camera went out the door when I got that kitchen aid mixer.. and it was worth it ;)

I found this gem at this amazing blog. :) Enjoy friends!
