Let the dream begin...

Guess what I got today? drum roll please... My new Kitchen Aid Mixer! I am so so excited! I am so very blessed that my friends, mom, and husband went to all that trouble to get me a mixer! It has only been in my house for a couple of hours.. and yes, I have used it. I made something scumdidilyumpcious! I know you want the recipe and some pictures to drool over so here you go! And if you don't know.. I am writing 31 days of God's dream for me which might explain this a little better. You can find that post here :) So here's to a dream beginning... baking my heart out. :)
I must be honest.. I decided to try a brand new recipe with my brand new mixer so I chose oatmeal coconut cookies. Oatmeal cookie dough is my favorite so I was pretty stinkin' happy with this ;) However, my cookies didn't turn out like the ones in the picture. After reading some reviews I decided to stick to the recipe exactly as stated since she had also made hers in AZ. They don't taste bad or anything, they just weren't what I was expecting. But by golly I had fun during the process because my mixer basically did all the work! For the last batch I even added some chocolate chips which made the cookies just the kind of yummy I was hoping for. Apparently my husband agreed since I got a much better reaction when he tried them with the chocolate chips! My favorite is still my dad's secret oatmeal cookie recipe. Gets better every time! Enjoy friends! Let me know if you can get these cookies to look as beautiful as the ones on this blog.





What's in em' 
1 cup butter-unsalted
1 cup brown sugar
1 cup sugar
1 tsp vanilla
2 eggs
2 1/2 cups of flower (I would experiment if I were you)
1 tsp salt
1 tsp baking soda
1 tsp baking powder 
2 cups oatmeal
1 cup sweetened coconut

Here's what ya do:
  1. Cream together butter, sugars, eggs and vanilla. Set aside.
  2. Mix all dry ingredients together in a separate bowl.
  3. Add dry ingredients to wet ingredients and mix well.
  4. Spoon onto greased baking sheet. Bake at 375 for 9-10 minutes. ENJOY!

  1. Do you have a cookie scoop and do you use parchment paper? Those are the two things I find absolutely essential for making "pretty" uniform cookies...having a baking stone helps too...

  2. I don't have the baking stone but I did go out and get a silicone liner and a cookie scoop pretty much after I made these! Thanks Sally! I will try em' out with the next batch :) I still want that granola recipe! :)
